Quick & Easy Recipe: kale, avocado, and grated carrot salad

This is an easy salad you can throw together in minutes, making it perfect for lunch or a quick dinner when your evening is packed with activities. Kale is rich in Vitamin C, iron, and calcium, and avocado is full of the healthy fats your body needs to thrive.

Ingredients:

1/2 bunch kale, stem removed, chopped

1 cup grated carrots

1/2 avocado, diced

2 Tbsp. red onion, diced

1 Tbsp. lime juice

1 Tbsp. hemp seeds

1/2 tsp. balsamic vinegar

 

Instructions:

Place all ingredients in a large bowl. Toss and serve!

People coming from the east will now have to fight through school traffic at Rt. 30/Schoolhouse.Read More People from southwest New Lenox will have to either venture up Cedar, which is painfully slow... or take Spencer from Laraway, in which they will have to cross Rt. 30 to go straight. Won't be an easy picnic.
