Roasted Golden Beets

Golden beets - what a find!  As I perused the fruits and vegetable aisles of the Whole Foods Market I came across golden beets.  Could it be easier than red beets that always seems to color my hands and cutting boards.

After peeling and cubing the beets, it was slightly coated with olive oil, kosher salt and cracked pepper.  The beets were placed on a baking sheet and roasted in the 375 degree preheated oven for 45 minutes to an hour. What a simple and wonderful texture and flavor.

The caramelized golden beets have the flavor of red beets although sweeter and a bit lighter.  This is going to be one of my favorite roasted vegetables.  It is a simple flavor that could lend itself well to any cut of meat.  Cubed carrots and sweet potatoes could also be added to this roasted dish.
